how to set up a voice lab on gns3-ER-1.0 ax or any other version,please help

    Although based around earlier versions of CUCM, most if not all of the info is still relevant...

    My suggestion to you is to forget GNS3 if you really want to learn voice, get a server, install Vmware, get an OVA template base on your CUCM version and the ISO , get a softphone and with that you should be fine to start. Later around you should get a Voice Gateway, at least 2811 router with PVDM( DSPs ) and FXO port fot your POTS and at least one FXS, create an MGCP gateway or a sip trunk and create your dialing plan. test inbound and outbound calls, set up SNR ( Singel NUmber Reach, set up SRST ( on the gateway ), play with BAT to import, export, update or delete entries in your database. Configure Media resources, configure auto registration, configure CMgroups, Device Pools NTP referernce, Date and Time groups, LDAP integration including for authentication. As you can see is a lot to be learn, go VMware if you really want to learn, If you just need to learn CME, then just get a 2811 router, install the cme and get one softphone and at least a 7940 and start playing.
