I'm thinking about doing a self study for windows 7 and 2012 server, but I would like to know would a laptop with 8 gig and a SSD be good enough for using VM workstations as a test lab for self study?

It depends on how many VMs you would like in your lab. I have 8 GB of RAM on my laptop as well and if I believe I had 3 servers and 1 client and it was enough.

I saw on new egg they had a refurbished dell laptop with 16 gig , that might work.
