MCSE Lab Setup: How would you do it?

I am starting to study for the 2012 MCSE. I plan on going the Desktop Infrastructure route. I like that MS doesn't make you do the WorkStation OS certifications to get this now. I can focus purely on the server OS. I have a Dell PowerEdge T100 with 8GB RAM and an Intel Xeon 6M Cache, 3.00 GHz, 133MHz FSB processor and two 250GB Hard drives.
What would be the perfect home lab configuration? Hyper-V on the server with virtual machines installed and then managed with a separate computer running Windows 8.1 Pro? Multiple NICS (One for each virtual machine)?
