OpenStack .. devops model...agile method vs. support model

Hello,
Anybody here experienced in OpenStack and devOps model? I am trying to wrap my head around how companies that do use this model support it? What does the support model look like for example?
I am very familiar with structured support models where there are release notes/ change management / communications / escalation path, all these things are defined and followed. What I am trying to understand is how that does all that work when you have a solution/application running on OpenStack and using devOps model (agile)?
Tips? Good links for reading? Link to training /course/ book etc... please share
