Its best to immerse yourself into the technology you want to learn. So if you want to learn Windows Server 2012, you should use it as hypervisor instead of ESXi.

I agree and im not looking into ESXi right now in terms of learning it.. i want to have multiple servers and integrate them together

Either one will work. Having the base server 2012 install and running 2012 VMs on it will help you with more hands on with HyperV as the MCSA tests cover hyperV
