Exam Cram 2 Network+, 2nd Edition - recommend this if you already have some real world networking experience as it hits the objectives head-on with no over simplification.

Transcender N10-003 Practice Test Simulator is worth the $$$ if you have it to spend.

Technotes on this site are also excellent.

I've used Thompson course guide "Guide to Network +" Book set by Michael Grice. I've heard great things about Mike Meyers' books, but I get a little discount on Thompson through the school I attend. Overall, though, the Thompson seems great, comes with lab manual, practice software, and can be purchased with voucher.
