How big of a lab environment are you looking at running? I mean I run gns3 on anything from my home PC to a mid ranged laptop. As long as you optimize the idle-PC and have enough overhead for memory for your virtual devices you should be in good shape. Personally I wouldn't dedicate stand alone hardware just for GNS3.
