Wanted to know the issues that you come across as a network engineer or any networking role. The reason I am asking is because I don't troubleshoot network related problems everyday, it was a one time configuration and that's it.

It depends on what equipment is in the organization's network environment, what services are provided, who are its customers, and what its business goals are. The generic stuff is users not being able to log in (forgot password, bad cert), Malware on computers (from download or email attachment), and many complaints about access and performance problems.
