I had no idea there would be logs for NAT...What are the pros of capturing these logs?

It can be exported via Netflow.
ip nat log translations flow-export v9 udp destination <flowcollector> 2055
That's for the ASRs. The ASAs can do with NSEL data. All depends on the platform.
