Workbook for interactive exercise and how do you break into IT security?

Hi, All,
Since last I wrote here I decided to change my attitude and stick it out with IT. I moved into the office doing IT. It's been a long six years but learn great deal of info. My current position is System Admin / Network doing general System Admin / Basic Network type of work hospitality industry.
I'm ready to taken on bigger challenges and move up in IT sector. However, when I look for jobs on various source I feel blank - I feel as if I don't have those skills or wouldn't know how to solve a certain situation. Being in IT I can say thing change fast daily.
My scoop is very limited as the organizational is not an advance level corp. It's a mom and pop restaurant shop that own chain of franchise.
I'm looking to break into IT security doing audit, policy, vulnerability testing etc...
Can anyone put me in direction of a books that can help me with exercise on how to solve difficult problem. A Real world workbook with examples.
I have NO Certs but a BS in Business Management Degree. My goal is to start knocking out Network+, Security+, ITIL, CCNA and from there go into security certs.
My goal in next six month is to change organization, get another Network Admin / Network Engineer role before moving into Security.
I have been in my current role for 6 years and I don't think I'll ever move up. There is only two of us in this company doing everything from basic Desktop support to easy network admin stuff, very basic stuff, supporting restaurant POS system, computer, printer, etc... I have also written some policy on security regarding user access, firewall and virus scanner, along with incident / response strategy, implemented trustwave firewall into existing POS system - nothing fancy.
I'm afraid that my knowledge is limited and if i decided to change company then practical workbook exercise can help me work those brain muscle in improving my confidence.
I know this is my limiting belief but I sure do need some confidence boost as I for one have become very "comfortable" in my current position.
Looking for some feedback on career and workbook info. How to break into security.
