Reconnect the power cable to the switch while holding down the Mode button.
Release the Mode button when the LED above Port1x goes out.
This should get you a "switch:" prompt.

Instead, type "conf t", do some configurations like "hostname MySwitch", type "exit" then type "copy running-config startup-config" to save your configuration into a new config file.
So, by typing the command that I highlighted "copy flash:config.text system:running-config", you were reloading the same config that contains passwords and user restrictions into memory, which is why you get locked out again!!.

1. I am scratching my head why Cisco instructions don't reflect this moment. Or it's something unusual with this switch? With first switch it was simple.
2. Also when I typed some commands I got:

I am planning to buy 5120 and fully loaded 5101 and may be 5114 in addition to 2 2610.

The 2514 has 2 Ethernet interfaces with 2 AUI ports, so it needs 2 trancievers.

On first switch I followed Cisco instructions and first run:

"rename flash:config.old flash:config.text" renames back the config file to it's original name.
"copy flash:config.text system:running-config" loads the config into running-config, which is
the state on which the device runs.
Now, when you did "rename flash:config.text flash:config.old" before booting IOS, you took
config.text away from IOS so that it doesn't load it at startup, which allowed you to bypass all
passwords and user restrictions configured into config.text.
But, when you did "rename flash:config.old flash:config.text" + "copy flash:config.text
system:running-config", you loaded the same password-including config that you have been
trying to avoid since the beginning. That's why it locked you down complaining about user
permissions etc...
