will the command

switchport voice vlan "vlan number"

be useful when connecting the cisco switch to a non cisco phone?

Depends on whether the vendor's phones support Cisco's CDP protocol -- some do.

If they don't you may be manually configuring the phones and manually configuring a trunk on the switch port to allow only voice vlan and data vlan traffic (for an attached PC) over the trunk.
