Segmenting VLAN VoIP servers

At our location we have created a special VLAN just for our IPT servers, including CallManager, Unity and IPCC - is it typical to segment just these servers?

We also have a vlan for Voice traffic, regular data, and WAN Traffic.

Yeah it's a common practice to place the servers on a seperate VLAN as one part of a security plan. The use of seperate voice and data VLANs is also common to do. It adds some complexity to the design but allows for greater security and some engineers will use it as part of their QoS design.
