I have studied exchange server 2003 by going through the Train Signal labs and following each step and understanding what is happening by setting up a virtual lab.
I also went through various chapters in books doing some reading.
I then decided to attempt some practice questions as I thought I was ready to but I am finding it very difficult?
Most questions do not seem to relate to any material I have been through.
Any suggestions where I am going wrong.

Have you done any MS exams yet? I wouldn't start with Exchange if you haven't gone through any of the other core exams first. I studied the main areas of the 291 and 293 exams before I retook the 284 exam the second time around and passed.

Nope, but Sec+ will count as an MSCE elective if you want to try that route. All things are possible, only believe.
