How to setup cisco Packet Tracer 5.0 beta to interconnect to two or more PCs ?

Uh, are you trying to connect the two PCs together without any networking equipment between them, such as a router or a switch or a combination of the two.
In simplest terms, to connect two PCs together, use a Cross over Cable and connect the two PC's NICs to each other. That is answering your question.
Now if you wanted to use a switch, use two straight through cables connected to the PCs and the switch. Give the PCs IP addresses that are in the same subnet; such as 192.168.1.1 and 192.168.1.2 with a subnet address of 255.255.255.0, no default gateway is needed if no router is router IP traffic between LANs!
