Most of the time I just get by with extended pings for both QoS and Multicast testing.

I think I also used the Media Server (streaming media server?) option on Windows 2000 Server (or something like that) so I could actually have something to listen to on a test host. And I've used or tried a few other free products out there.

    packet generating software

    QoS traffic generator

    CTs take on Multicasting

    multicasting....

If it's real networking kit you have, hook a pc both ends and then download something huge from one to the other. Spam different downloads, lookups etc and the kit in between will get hammered. You could also try pinging different ports with tcp/udp etc. Have a play and then try tracking it.

If it's a simulator, I am not sure. I see Bonon CCNP 7 (no point in bying Boson ccna) now has traffic generated with it apparantly but not sure about dynamips.
