how to setup log to examine message packets

Can anybody tell me which debug logs would allow me to view message packet size in exchange 2003?

Are you talking about the average message size of e-mail? If so, you should be able to use a third party tool such as MessageStats to collect data to analyze your messaging environment. You can check out MessageStats at the following URL:

As for actual packet information. Ask your network guy on how to collect packet information/size, I'd ask in the networking forums.
