can't grasp permissions

I have difficulty learning permissions, I just get lost, any suggestions. I have a small network and can practice.

Read the technotes here on permissions, its pretty good. I always leave SHARE LEVEL at default (everyone full).. Then change the NTFS permissions...and deny groups and issue less privelages...When share level and NTFS meet, the most restrictive apply....EX. If share level for Everyone is FULL, I issue Accounting READ...And read applies..Then deny someone who you do not want access..
