I was wondering... if I were to take the following four exams would that make me an MCSE with both the Messaging and Security specialities?

The answer is unfortunately: No.
You'll need a second security elective in order to obtain your security specialization (you will earn the messaging one though). You'll also need to do one of the ISA exams or the Security+: http://www.microsoft.com/learning/mcp/mcse/security/windowsserver2003.mspx -
