I haven't seen any lab workbooks for the CCSP.
Your best bet may be to get something like the Technology Lab Workbooks from the CCIE Workbook Vendors. They won't perfectly align with all the CCSP exam options, but they should cover a lot of the highlights for the major topics (and hardware).
