Was going through some old equipment at work today and came across a CPA 2511 Access Server. It is a Yellow/Cream color chassis with the same ports as a regular 2511. What is the difference between the 2511 & CPA 2511. Will this work OK as an access server if I get Octal cables for it?

Should work, they just had IOS limitations where you couldn't load 11.2 or later unless you follow this to flash it so you can run a standard image:

I think it's just an earlier model -- I have a CPA2509 and it's running one of the last 2500 BIOS and 16/16 memory -- and the last 12.2 Enterprise Plus IOS image with no problems.
Grab it and check out that it works -- you should see the 16 Terminal Lines when you do a show version command.
If you just want to use it as a terminal server you may not even need to update the ROM, Memory, or IOS image -- just get some octopus cables.
