    you could do a packet capture on traffic to his PC,

    (use a mirror/span port)

    then filter this for email traffic, and simple use something like wireshark to rebuild the messages.

    then you can easly see what messages he has been reading. (only works with unecrypted snmp though)

    also with in exchange there is a lot of logging you can turn on. you should look through to see if you can log request that come in from the PC's.
