I am going through my Exchange Upgrade / Migration paths for Exchange 5.5 and 2000 to Exchange 2003. Please look over my flow chart and let me know if I've got something wrong.

For one, you don't need ADC's to upgrade from Exchange 2000 to 2003....

That is correct. If you look at the flow chart again, you will see that the ADC portion that is connected to Exchange 2000 is in the case of an Exchange 2000 to Exchange 2003 migration, not an upgrade, where there is a requirement for co-existance of the two messaging systems (I don't know why anyone would want to do this, but I wanted to make sure that I had my theory correct).
