I don't want a **** but is there a guideline as to which protocols that we should know, their port and were they fit in the OSI model? Also, is there a listing somewhere which has the protocol, port and layer?

None of these are Layer 1 protocols. Layer 1 is the Physical layer. If you are saying that these are all Application Layer protocols then that is Layer 7.
