If you have a trunk up that is properly configured, will it always show as trunking when you do a show int status?

Yes! Because if it is properly configured, then it should only be trunking.

The exception to that rule is... if the switchport mode is "dynamic desirable" (which is default for most Cisco Switches), the port will only show as a trunk if the port has negotiated a trunk with another switch on the other end. If a PC is detected on the other end, the port will show as an access port. HTH
