Microsoft Exchange Server 2007 Administrator's Pocket Consultant
Mastering Microsoft Exchange Server 2007
I started with the Mastering book and use the others for reference.
For PowerShell I used these books:
Microsoft Windows PowerShell Step By Step
Windows PowerShell(TM) Scripting Guide
But they are out of print and there are better books out there.
Here's what I used to study for the exams:
Sybex 70-236
Sybex 70-237 and 238
MS Press 70-237
MS Press 70-238
The 236 is about half powershell and half exchange and one of the more difficult exams I have taken. The 237 was a breeze and the 238 was one of the best all-around microsoft exams I have taken. When I took the exams they were based on the RTM version of Exchange and not SP1 (or later). That means no SCR among other technologies. Be sure to know the feature differences between RTM and SP1 if the exams still haven't been updated.
The book I wish I had read before I took the exams:
Designing Storage for Exchange 2007 SP1
It's half storage and half high availability, and a really good book.
