I mean cant someone write a step by step of each? or am I missing something?

There are a lot of step-by-step configuration examples on the Cisco web site.

What router/devices IOS/software versions are you using?

are you using ASA's. I did one not to long ago for a site to site and the ASDM went right through it.

The Cisco Academy courseware for the SNAA had walkthroughs of all types of VPN's. See if you can find it online.
