I'm planning on doing MCITP: Enterprise Desktop Administrator 7. I have Windows 7 Ultimate installed. Can I use Windows 7 Ultimate or do I need Windows 7 Enterprise?

They are the same.
Correct. Ultimate is OEM/Retail and Enterprise is Volume Licensing
