So I have been looking at this to get an idea for what should be in my default domain policy:

I have also found this link:

And then I started to think: how much of this is covered on the 70-640? I am just curious. I need to bone up on this anyway but if I basically cover the contents of that cert then I might go for it.

I think you should lab up Group Policy pretty well. Expect to see more than a few questions on this topic on the 640. You'll need to know it for the 643 and 647 exams too, that's if you go the whole way. Besides, it's one of the mainstays of any good AD structure. That second link you linked to is excellent.
