Passed the VCP-510 exam a few days ago! I studied mainly using the vSphere pdf documents at https://www.vmware.com/support/pubs/vsphere-esxi-vcenter-server-pubs.html
Exam was harder than I thought it would be. Now to get off my butt and study for the VCAP(s).

What are your thoughts on the Red Hat Certified Virtualization Administrator ===> Certification?

The LPIC is a great exam but it mainly covers scripting. By comparison, the Redhat certifications are hands on and alot more difficult. IMO, the Redhat certifications are more sought after by potential employers. The only downside is the cost of the Redhat certs. I was lucky to get my employer to pay for it, otherwise I probably wouldn't have taken it.
