Our schools been using the MOAC series for all Microsoft classes. Are these good or should I be using something else for learning the 70-680 material. Here is the book I found 70-680: Windows 7 Configuration, Textbook (Microsoft Official Academic Course Series).

That's definitely a good book to be using. Back when I took classes on Server 2003, the MOAC books were essentially just the paperback editions of the MS Press certification books, so you're probably looking at a similar deal with this. What I would strongly recommend you do is to study from more than one source since no one book contains all the material for the exam, just most of it.

The most important thing to remember is that you don't want to underestimate this exam. Chances are, the class you're taking won't cover everything and the final exam will be much easier than the cert-test. I highly encourage you to download a
trial copy of Windows 7
and lab as much as you can, either on some spare computers or in a
virtualized environment
