Workstation - 2x E5410 or 1x E5620

I got two server coming back which aren't needed any more so I intend to use the parts for a new workstation as I don't have one any more.
Now the question of the question - do I run either one or two E5410s or a single E5620 - the motherboards seem to be equally expensive (single socket ones seem to be more expensive in a way).
Now the big decision - which route to go .. most boards probably support both, but I wouldn't go dual socket for the 5620 so I guess its more likely a Single vs. Dual socket decision ...

If you are going with 12GB or less, I don't think you will get much benefit out of going dual socket.
