I am starting a 70-680 course next year and intend to upgrade my Visa laptop to Windows 7. I am not sure what version to upgrade to. Is Home Premium OK or should I really be using Professorial or Ultimate? I'm guessing Professional would be better as this would be used in companies.
Any advise?

The Ultimate/Enterprise features aren't prevalent on the test outside of knowing what they are and that they are not available on other editions. There will likely be some practical questions on them, but I found I did not need to lab them both in taking practice exams and the real exam.
If you have Ultimate or Enterprise, by all means, lab it, but if you are looking at purchasing it I would spend the extra money for the purpose of certification. It is unnecessary.
