Admins familiar with Exchange 2003

I've done mostly internal email with Exchange 2003 and am not too experienced. Well my new administrator position has be researching a new mail solution.

We currently host our website and e-mail through our ISP. I was wondering if anyone can give me a quick and dirty or send me some links on where I can get more info on it. I need something from the initial setup, external name servers and MX records setup.
