Here's a list of courses offered at this year's Black Hat USA in Las Vegas:

Not cheap, but an interesting mix of offensive and defensive subjects. I took a couple of classes last year (employer-sponsored) and it was great fun. These are held before the two-day Briefings, which happens right before DEFCON.
