I would recommend this book:
Practical Packet Analysis, 2nd Edition | No Starch Press (it's very hands-on)
If you look at the online table of contents (PDF) you can get an idea of some nice places to try for additional information.
If you take this to a further level, you'd wind up here, but not sure it'd be necessary:
Wireshark University

I enjoyed and highly recommend Laura Chappell's Wireshark Network Analysis. Since I currently hold the WCNA, they're supposed to be sending me a copy of the new Wireshark 101 book.
