Practical Packet Analysis, 2nd Edition | No Starch Press (it's very hands-on)
If you look at the online table of contents (PDF) you can get an idea of some nice places to try for additional information.
If you take this to a further level, you'd wind up here, but not sure it'd be necessary:
Wireshark University
