Linux in the real world by cbt nuggets is a cbt series that includes that stuff.

Could try a book like Ubuntu server unleashed.

You also have google/YouTube as mentioned where there would be plenty of free guides and videos.

Hands down one of the best / easiest to follow book on Setting up Centos as a server, It's recipe based so you set off with a goal, Covers all areas such as FTP, Samba, Cron, and even covers rsync.
