(Bridges) keep a table with MAC addresses of all nodes, and on which segment they are located.

By examining the mac address in frames which the bridge receives, so it will learn which addresses are on which side of the bridge.
Although www.cisco.com will have some more detailed docs, here's a page at MS I stumbled on a while back, which explains it rather well (Learning process):
