Where can I find a good lab exercise that corresponds to the PART 2 - Ethernet Lan Switching concepts of Odom Wendell's book? It should include Password setting, MAC addressing, VLANs, and Port security.

If you have packet tracer you can be creative and create your own labs off the back of Wendell's book. I find personally this gives you quite a bit of:
a) practice in the CLI
b) a much better understanding from bottom up
c) unexpected surprises which working out gives you even more knowledge!
Yes it can be time consuming but once you start hitting the latter sections of Chap 2 you'll find it much easier, especially if you understand the concepts of the frame filter/forward logic from part 1, mac address tables etc
This is what I'm doing just now btw.
