If I learnt 2013 would I have a good grasp of 2010?

That's kind of vague; but yes, you would.

You would understand some Exchange 2010, but the architecture is different between the two products...

Exchange 2007 and 2010 are similar for administration. 2013 is very different and only shares similarity in powershell administration, everything else is web based instead of an admin console.

Reason I ask is because I am buying the mastering exchange 2013 book and I am hoping I will learn enough with this to be able to work with both systems.

The learning curve will be easier 2010 to 2013 than 2013 to 2010 because as others have pointed out, they eliminated the EMC in 2013 favoring a web based console. Additionally, the first release of 2013 (fixed as of SP1) did not include the edge transport role so most material out there for 2013 won't have anything about that role but it will if you read up on 2010.
