Required for MCITP/MCSA Server 2008? Yes, those be the three you'd need to get that cert.
"Easiest" is subjective, depends on what you already know. I'd suggest you look at the exam objectives and gauge it based on that. -

The 646 is easy if you know the material of the 640 and 642 along with what server technologies to use when. However the 640 and 642 are both difficult exams
