In case we have to rebuild our Exchange Server, where can I find the CALS? Can I view it somewhere? Any help is much appreciated

We are running 2008 server R2

    CALs are on the honor system. You buy them and put them in a drawer/safe/electronic vault, etc. for compliance. They are not added to Exchange anywhere.

    Are you by any chance talking about the Product Key? Also, when talking Exchange is generally more useful to mention its version rather than the OS.

    ^^ that ... if Exchange 2010 you can run a report showing how many CALs you require (Enterprise for Archived Mailboxes required)
