how do you guys set up your home lab to practice to 291 exam? how many servers are running? how many domain controllers, DNS servers, RRAS, IAS, VPN servers????
I am trying to set up more servers for this exam.

I used quite a few machines when I was doing my 70-291. Of course the amount of machines you are using depends on what topic you are studying. When I was first configuring DNS, I would have 2 member servers that just created regular primary/secondary dns that would transfer zones. Later I removed the zones, turned them into Domain Controllers with DNS. 2 Domain Controllers for 70-291 should suffice. You won't need more than 2 Domain Controllers until you get to 70-294. I'm pretty sure for RRAS, I used either 1 or 2 servers. I also had 1-2 XP client workstations.
