The one you enjoy the most.

You will be much more knowledgeable and come across more knowledgeable if you intend to specialize in something that genuinely interests you.

If you spend your time dedicating your career to what is more in demand at the time, you will always be behind the curve. Pick something that truly interests you and that you want to learn. You will find yourself slowly become the "go to guy" for that technology, instead of the bandwagoner who won't be able to find a job because 150,000 other people saw that skill was in demand at the time.

This is going to vary from market to market. Do some google-fu/indeed searching and see what people are asking for in your neck of the woods.

It depends on what interest you the most but most people take the routing and switching route(CCNP) however Security professionals(CCSP) are in high demand Cisco Career Certifications - Wikipedia, the free encyclopedia

keep in mind while other tracks may appear more in demand on job boards etc. They ALL without doubt expect you to have a good understanding of routing and switching under your belt.
You cant go wrong with nor can you avoid that, everything else can be added later.
