We have ~40 deployed primarily for web filtering, spyware, antivirus, etc. They work quite well, most of our offices (anywhere from 10-60 users or so) do just fine on an Intel mini-itx board with a dual core Atom CPU and 2GB RAM.

PF Sense is a good option too. I learned about this product from this forum and I now use it in all of my virtual labs since it comes in a VMWARE appliance version. You can run it with barely any resources and it performs very well. I found myself having to through a lot of memory and processor after untangle in order for it to work efficiently. PFSense works with one proc and 128MB of memory. Its the difference between a UNIX based appliance and a Debian based appliance.
