Unless you just don't want to download it I would get it from Microsoft for free.

Yes, it's very useful to practice on if you have a PC to install it on or dual boot.

That will work but don't buy it when you can get it for free.

It depends on the processor you have in the machine you indend to run it on.
1. 03 server, enterprise ed. with sp1(32bit)
Most likely your machine. Note the 32bit. If unsure, get this one.
2. 03 server, enterprise ed, for itanium based servers
This is for Intel Itanium processors only.
3. 03 server, enterprise x64 ed
This is for 64bit processors such as the Athlon 64 or Opteron.

I would assume you have a regular 32bit computer in which you want the first one. But, I'm almost positive you wont need the second one. The first one is the most common one.
#2 is for high end servers.
#3 is for 64 bit processors

After you install the trial and get its base configuration set, make a Ghost image of the partition so you can easily reload a "clean" copy of Windows Server when you need to. Save the Ghost image file to a second partition or second hard drive on the same machine.
I also like to use emulator programs like VMWare 5 and Microsoft Virtual PC 2003 to run Windows Server (Linux, MS-DOS, whatever) on my XP Pro workstation. Make sure you have plenty of free RAM if you run multiple virtual machines simultaneously on the same computer.
