i know different companies have different description of these roles
but what is the difference between
a junior system admin/engineer, intermediate system admin/engineer, senior system admin/engineer.

The differences are totally arbitrary, and will vary greatly between organizations. They are meant to be vague representations of some combination of skill level and experience.
I would consider junior to be 0-3 years experience, intermediate to be 2-7 years, and senior to be 5+ years. The overlaps are intentional as experience does not translate to skill level (there is a strong correlation, but not 100%).
