Yes you have enough resources. I used this lab guide to help build mine. Im sure things are very similar in Fusion.

very easily. Lay down 2x ESXi install, throw in a Win Server 2012 trial for NFS iSCSI storage and you're good to go. I had mine setup in about 30 minutes.
