Just as EANx said, places you can volunteer at will want to see that you are going to provide value to their organization. As such, consider building your credibility through blogging or other projects. The Denver area has a pretty competitive volunteer pool, so non-profits can be selective. Don't be surprised to get rejected. One possible hindrance to the part-time experience is that most part-time IT positions in the Denver area are retailers (Best Buy/Geek Squad, Apple, etc). You could volunteer to teach IT related subjects to people at community centers as they provide a lot of flexibility. You might inquire at the Denver library (or whichever library you are closest to) to see if they need any part-time help. If you are comfortable with it craigslist might also be helpful in your search.
