Why wouldn't they? L2 VPNS are getting more popular with storage and other "cloud" apps needing L2 connectivity over the WAN.

For some odd reason I was thinking L2 as in ATM cells for MPLS. MPLS can use any transport, I'm not to sure why I was thinking so narrow minded. I stand corrected.

Any suggested readings on this topic? I've been nibbling away at MPLS (still a long ways away before I understand it), but having a good book to use as a reference and/or starting point would be outstanding!

MPLS Fundamentals is a great book for learning MPLS.

After posting, I remembered seeing someone recommend the book MPLS & VPN Architectures. I'll probably pick up the two books soon.

I wouldn't recommend the above one and would rather go with MPLS Fundamentals (by far the best MPLS book around) and Layer 2 VPNs. VPN Architectures is too outdated and goes on about TDP wheres everyone is using LDP nowadays.

I would say L2 VPNs are going to become more and more common. VPLS is getting popular in the service provider industry. I think the only problem right now is the high costs for these types of service. Even a P2P Ethernet Over MPLS circuit is expensive.

How many Enterprises are creating there own MPLS VPNs? I know I have seen a lot of companies just outsourcing it all these days to service providers?

Not many. Most enterprises don't have the backbone infrastructure needed to setup this kind of service themselves. That is why they are forced to purchase the service from a company like att,cogent, level3,qwest,abovenet etc....
